Pan Roasted Gulf Fish topped with sizzled crab meat and lemon caper beurre blanc 

Grilled Lamb Loin cayenne marinated with bourbon mashed sweet potatoes and southern style bacon braised greens 

Alligator Piccata alligator tenderloin scallopini with roasted garlic mashed potatoes and white wine-lemon-caper veloute 

Jefferson Crab Pie jumbo lump and claw blue crab meat in a sherried gruyere mornay sauce under golden brown puff pastry 

Grilled Duck Breast sliced pekin duck with pecan pesto rice and jalapeno hollandaise
